Our Sun is the best-studied star in the Universe, but many stars are far more active, producing enormous flares and displaying behaviour that still puzzles astronomers today. Starting with what we know about the Sun, I will explore how stellar activity changes across different types of stars, including some that rotate so rapidly they challenge our current theories. I will then explain why understanding stellar variability is essential for discovering and studying planets around other stars, and why active stars are one of the biggest challenges in the search for Earth-like worlds.
